Garden Salad

Besides being a food enthusiast, I am an avid gardener too. I have always fancied assembling a beautiful kitchen garden with diverse fruits and vegetables on my home grounds. This produce, when used for cooking purposes, tastes like no other. Garden Salad is a dish which can vouch for that. This colourful melange of garden produce is one of the most versatile salads out there, in the sense that any fruit or vegetable or herb can be used as an ingredient in it. The veggies that I have used here are the salad staples, like sweet corns, French beans, tomatoes, etc. Both orange fruit and orange juice have been used here, as they bring out the flavour in each other.  Nuts or dry fruits like walnuts can also be used as the crunch element. The dressing is more on the sweeter side of the spectrum, with hung curd, honey and lemon delivering a kickass flavour. The hung curd gives a creamy spin to the salad. A few spices have also been used, which can be added according to taste. Chill it for some time before serving. So do not hesitate to experiment. Pick some fresh and wonderful fruits and vegetables for your Garden Salad; the possibilities are endless.

How to make Garden Salad

Ingredients

Cauliflower, chopped ½ cup
French beans, chopped ½ cup
Sweet corns ½ cup
Carrot, chopped ½ cup
Cucumber, chopped ½ cup
Tomatoes, chopped ½ cup
Oranges, peeled and cleaned ½ cup
Strawberry chopped ½ cup
Orange juice ½ cup
Walnuts ½ cup

For Dressing

Hung curd ½ cup
Honey 2 table spoon
Cinnamon powder 1 tea spoon
Lemon juice 1 table spoon
Olive oil 1 table spoon
Salt to taste
Black pepper to taste

Method

  • 1. Mix the dressing ingredients and keep aside.
  • 2. Parboil cauliflower, French beans and sweet corn with some salt till becomes tender.
  • 3. Combine all the salad ingredients in a bowl and drizzle orange juice over it.
  • 4. Just before serving combine dressing with the salad ingredients and toss till well coated.
  • 5. Garnish it with walnuts and strawberries and chill it before serving.
