Cucumber Halwa Recipe

Cucumber Halwa is an interesting healthy dessert. It is prepared with cucumber, and low fat milk. Sugar can be added for sweetness, but here I have used sugar supplement. It tastes really good can can be taken by sweet lovers, who have restrictions in diet. Cardamom has been used to enhance flavor. It has been garnished with little raisins.

Ingredients
Cucumber (kheera)grated 1 cup
Low fat milk (doodh) 1 cup
Milk powder of low fat milk 2 table spoon
sugar supplement (cheeeni) 2 table spoon
Cardamom (elaichi) powder ¼ tea spoon
Clarified butter (ghee) ¼ tea spoon
Raisins (Kismish)

Instructions

  1. Wash and peel one cucumber, grate it and squeeze out water.
  2. Boil cucumber with milk for 15 minutes or till milk dries completely.
  3. Heat 1 tea spoon of clarified butter and add cucumber and sauté for 5 minutes.
  4. Add cardamoms, milk powder and sugar supplement and keep on stirring. Cook it for 2-3 minutes and when it is done, remove it from flame and garnish it with raisins.
