Veggie Egg Toast Recipe
If food is likened to a pack of cards, egg is the joker of the pack. Egg is used in a variety of dishes and never fails to enhance the charm of these dishes with its unique flavour. In this recipe, I have made use of eggs with vegetables, which makes the dish more palatable and multiplies its nutrition quotient.
Sliced beans, capsicum (Shimla mirch) and onion rings (pyaaz) are sautéed and sprinkled with spices. These spices can be added according to use. Some other vegetables can also be used apart from these, like carrots (gajar), bell peppers, etc. Two eggs are poured into a hot pan and fried in a little amount of oil. Breads are toasted in a toaster and butter and mayonnaise are applied onto them. These luscious bread slices are topped with the fried eggs, which in turn are topped by the fried vegetables. Tomato sauce is drizzled on top, giving the dish a tangy twist. This veggie egg toast can be enjoyed with a hot cup of tea or coffee, as a breakfast dish. It is easy to prepare and flavoursome to taste.
How to make Veggie Egg Toast
|French beans, thinly sliced||¼ cup|
|Capsicum (shimla), thinly sliced||¼ cup|
|Onion (payaz), rings||¼ cup|
|Black pepper (kali mirch)||to taste|
|Salt (namak)||to taste|
|Tomato sauce||3-4 table spoon|
|Mayonnaise||3 table spoon|
|Vegetable oil||2-3 table spoon|
|Butter (makhhan)||to taste|
- 1. Heat oil in a pan and fry vegetables in it. Add salt and pepper and stir it and keep it aside.
- 2. Add little oil in same pan and break and pour egg directly into pan. Sprinkle salt and pepper and cook it for 2 minutes. Turn the side and again cook it and set aside.
- 3. Repeat the process with other egg also.
- 4. Toast bread in a toaster and apply a layer of butter and mayonnaise on one side of it.
- 5. Arrange the breads together on a serving plate.
- 6. Now put the fried eggs on the side, where mayonnaise and butter has been applied.
- 7. Top it with fried vegetables and sauce.
- 8. Serve this “Veggi egg toast” with a cup of coffee.
