Method

For sandwich

  • 1. Cut cottage cheese into 1 inch thin slices (preferably cut into same sized square).
  • 2. Take coriander leaves, garlic cloves, green chilies and salt together in a motor pestle. Crush them finely.
  • 3. Take two slices of cottage cheese and put some prepared coriander mixture in between the slices (this will look like cute small sandwiches).
  • 4. Repeat the process with other slices and keep the sandwiches aside.
  • 5. Now prepare a batter of all purpose flour with water. This batter should be of a coating consistency, (This mixture should not be very thick).
  • 6. Heat enough oil in a deep pan.
  • 7. Dip the sandwiches in the batter and put this in hot oil and remove immediately. (This will not change the colour of cottage cheese, but the two sides of sandwich will stick together and in gravy it will not break).

For Gravy

  • 1. Take raw tomatoes, whole dry red chillies, cinnamon, cardamom, cloves, black pepper, bay leaf, ginger paste and garlic paste in a pan.
  • 2. Add 3 cups of water in this mixture and boil it till the tomatoes are softened.
  • 3. Put the flame off and let it cool for sometimes.
  • 4. Now mash tomato mixture and strain the puree.
  • 5. Take this puree in a pan and again switch on the gas and let it simmer for 5-7 minutes.
  • 6. Add red chilli flakes, dried fenugreek leaves, salt and sugar to the boiling puree and further cook this for 5 minutes.
  • 7. Add cream, food colour and butter in the puree and boil till the gravy becomes thick.
  • 8. Add the prepared sandwiches in the gravy and boil it for another 5 minutes.
  • 9. Garnish “Paneer sandwich with gravy” with little cream and serve hot.
